Our approach is ingredient‑driven, seasonal, and rooted in storytelling. Our Story
Calamansi is the culinary studio where Filipino heritage meets modern artistry. Founded by Chef and Owner Jaimee Fuertes Skinner, the studio began as an intimate exploration of memory, identity, and flavor — a quiet rebellion against what Filipino food was expected to be.
What started as small, candlelit pop‑ups has evolved into a series of immersive dining experiences, each one a study in contrast: bold yet refined, nostalgic yet new, rooted yet unafraid to wander. Calamansi is Jaimee’s lens — a place where culture becomes couture, ingredients become narrative, and every dish feels like a moment worth lingering in.
